Bitterness is a weird favor that everyone seems to crave. The grinding texture against your tongue. The dry mouth sensation. The need to chase it away with something softer. Black coffee, dark chocolate, dark greens, citrus peels. When something has one of these additives it feels illusive, classily, expensive. Maybe we seek out these flavors in our foods so that we don't seek out the bitterness in others.
